9 Ingredient Pad Thai

  • Brown rice noodles

  • 1/2 cup frozen edamame

  • 1/2 cup frozen peas

  • 2 cups of broccoli florets

  • 1 cup mushrooms

  • 1/2 cup shredded carrots

  • 2 green onion

  • 4 tbsp of ginger, garlic, and scallion pad thai oil (if you can't find this you can buy each individual ingredient

  • 3 tbsp sesame seeds

Bring a pot of water to a boil and put in the rice noodles. You can decide the amount of noodles that you want. In another pan bring the ginger/garlic/scallion oil (or any other oil) to a medium heat. Add in all of the vegetables to the pan and cook until they are tender. Once the noodles are done cooking, drain them and then combine all of the vegetables to the noodles. Then top with sesame seeds!
