Asian Veggie Fritters


Ingredients:

  • Bok Choy

  • Mushrooms

  • Sesame seeds

  • Boiled potatoes

  • Shredded carrots

  • Flour

  • Toasted Sesame oil

  • Soy sauce

  • Sweet and Sour chili ginger sauce

  • Olive oil

Put bok choy, mushrooms, boiled potatoes, and shredded carrots in a food processor. Blend them together and then add in four tbsp of flour and one tsp of toasted sesame oil. Mix in the sesame seeds to the ingredients. Heat  two tbsp of olive oil and one tbsp of soy sauce in a pan. Ball the veggie mix and flatten (if the ball is too thick it doesn't cook all the way through), then place the fritter into the pan. Cook for two to three minutes on each side. Serve with a chili and ginger sweet and spicy sauce.
