Berry Breakfast Bars

Ingredients:

  • 1/2 cup blueberries

  • 1/4 cup  sliced strawberries

  • 1 tbsp of granola

  • 2 tbsp of peanut butter

  • 4 tbsp of honey

  • 3 cups of oats

  • 4 tbsp of flour

  • 1/3 cup pecans

  • 1/3 cup almonds

Heat oven to 350 degrees. put 1 cup of water in a sauce pan and add in 1 tbsp of honey, 1/2 cup of blueberries, and 1/4 cup of sliced strawberries. Cook over medium heat for 5-8 minutes or until the mixture has become syrupy.  In a mixing bowl add in 2 tbsp of peanut butter and 1 tbsp of honey. Place in the microwave for 30 seconds. Mix the peanut butter and honey together and then pour in 3 cups of oats. Mix the contents well. The mix should be crumbly. Add in 4 tbsp of flour and mix it in well. In a parchment lined cake pan pour in the oat mixture. Press the oats in until they are flat.  Now, the berry mixture should be syrupy! Pour the berry mix on top of the oats. Top the berry mixture with 1/3 cup of pecans, 1/3 cup of almonds, 1 tbsp of granola, and 2 tbsp of honey. Bake in the oven for 30 minutes.  Pull from the oven and let rest for 15 minutes.

Pull the breakfast bar mix out by holding the parchment. Cut the mix up into bars or any shape you like.  Eat them with a hot cup of coffee or tea!
