Mmmmmm bagels, blueberries, and blueberry schmear. That will definitely launch you out of bed in the morning!
This recipe is really simple- 10 minutes tops to make. You can make the schmear while your bagels are getting golden and toasted. I seriously just ate one of these and I already want another one!
Your favorite bagel
1/2 cup blue berries
1 tbsp local honey
Kite Hill vegan cream cheese (trust me, it's amazing and only 70 cals)
Put about 1/3 cup of water into pot and add in the blueberries. Bring the water to a boil. Add in the honey. Stir until the blueberries get swollen and then gently push on the blueberries to release their juice. this is how you get that beautiful purple color. Boil for about 2-3 minutes and continue to stir. Then let the mixture simmer and get a little thick for about 1-2 minutes. Then set aside.
Spoon out about 2-3 tbsp of Kite Hill cream cheese into a bowl. Take your blueberry mixture and pour 2 parts juice and one part blue berry into the cream cheese. Do not pour all at once. If you want to get a cool marbled look then pour a little juice in and mix the juice in from the bottom. If you love blueberry then pour the whole dang thing in and stir it all up.
Spread your blueberry schmear over your nicely toasted bagel and enjoy!
