Broccoli and Veggie Pizza


I tried out this recipe from Love and Lemons. It was a huge hit! I just tweaked a few things


Ingredients:

GF pizza crust (you can make your own or purchase it. I bought mine from Trader Joe's)

1 cup of frozen broccoli

1 cup of frozen corn

1 small red onion

5 sundried tomatoes

1/3 cup of vegetable broth


Cashew Cream

1 cup of unsalted cashews

1/2 cup of water

1/3 cup of jalapenos

2 tbsp of lemon juice


Follow the instructions for making your crust. Then heat the oven to 450. In a pan add in the vegetable broth, corn, and broccoli. Steam until all the liquid is used up and you can slice up the broccoli with a spoon. Chop up the onion and the sun dried tomatoes.

While your veggies are steaming make the cashew cream. In a blender add in all of the ingredients for cashew cream. Blend until you get a thick cream.


Then spoon some of the cream on the pizza crust like it's pizza sauce. Top with broccoli, corn, red onion, and sun dried tomatoes. Then put in the oven and bake for 5-15 minutes (depending on if your crust needs to further cook).


Pull from the oven and drizzle with more cashew cream sauce and then serve!
