Chickpea Salad Sandwich

Ingredients:

  • 1 can of chickpeas drained

  • 1 avocado

  • 1 batch of green onions sliced

  • 1/2 lemon wedge- juiced

  • 2 slices of dave's killer bread

  • 1 tbsp of Sir Kensington's Vegan Chipotle Mayo

In a bowl add in the chickpeas, avocado, green onions, and lemon juice. Mix up and smash until you have a consistency you like. I usually just make it with a few whole chickpeas to give it a slightly chunky texture. Spread the chipotle mayo onto the bread and then spread the chickpea salad onto the bread slices.
