Chunky Monkey


My chunky and mischievous little niece loves berries, bananas, granola, and peanut butter-so I dedicated a breakfast to her! This treat is very simple to make and goes amazing with a perfect cup of coffee. I ended up devouring my first batch because they were so irresistible!


Ingredients:

  • Whole wheat tortilla- small

  • Half of a banana- cut lengthwise

  • Handful of blueberries

  • Half a tbsp of your favorite peanut butter

  • 1 tbsp of your favorite granola

  • 1 tsp of local honey

  • 1 tsp of ground flaxseed- gotta make it healthy for the adults as well!

Time to prepare this delicious morsel!

Spread your peanut butter across the tortilla and place the bananas in the middle. Then arrange the blueberries to one side of the bananas (easier to fold this way). Top the bananas with granola crumbles, honey, and flaxseed. 


Then take one side of the tortilla and roll it all the way across to fold in the ingredients. No need to try and roll in every part of the tortilla. Then cut the round burrito in half and warm in the microwave for 20 seconds. 


Serve with your favorite tea, a nice cup of coffee, or even some hot chocolate!
