Creamy Garlic Artichoke Fusili

  • 1 box of red lentil fusili pasta

  • 2 cups of broccoli

  • 2 cups of sliced mushrooms

  • 1/2 cup of vegetable broth

  • 1 jar of Seggiano artichoke and garlic sauce

In a medium pot bring water to a boil. Add in the red lentil pasta and cook until it is tender. Drain and set the pasta aside. Pour in the vegetable broth to the medium pot and bring to a boil. Add in the broccoli and mushrooms. Steam until the vegetables are tender and the liquid is absorbed.  Add in the the pasta and the jar of artichoke and garlic sauce. Mix it up until the noodles and vegetables are coated and serve.
