Joe's Vegan Lox and Bagels

3 large carrots 1 package of Kite hill jalapeno cream cheese (or kite hill plain cream cheese) wheat bagels 1 tbsp of tamari low sodium Red onion slices 1 tsp liquid smoke 1 tsp sea kelp seasoning 1 jar of capers

Preheat oven to 400 degrees. Slice up the carrots with either a potato peeler or a knife. Cut them into strips that are thin. In a bowl combine the carrots, liquid smoke, sea kelp seasoning, and tamari. Mix well until the carrots are thoroughly coated. Line a cookie sheet with aluminum foil and pour the carrots onto the foil. Spread them out so they don't cover each other. Cover the carrots with another sheet of foil. Cook in the oven for 20 minutes.  While the carrots are cooking slice up red onions and wheat bagels. Put the bagels on a cookie sheet and put them in the oven with the carrots for about five minutes or until they are toasted to the level you like.  Take out the bagels and put them in a bowl. Pull out the carrots when they are finished and put them in a bowl. Put out the cream cheese, red onion, capers, bowl of carrots, and bowl of wheat bagels. Let your friends and family assemble their bagels and enjoy!
