Ingredients 1 sweet potato
5 tbsp of Sky Valley mole sauce (or more if you like more)
1/4 cup of Saffron chipotle chickpeas
2 tbsp of sunflower seeds
2 tsp chili powder
2 tsp cinnamon
dash of salt
Heat the oven to 350 degrees. Slice up the sweet potatoes into halves until you have four large slices of sweet potatoes. Place the sweet potatoes on a parchment lined cookie sheet. Bake for 50 minutes or until you can slice the center easily.
Pull the sweet potatoes from the oven and mash up the center of the sweet potatoes slightly. You don't want them completely destroyed. Drizzle the mole sauce on top and then dust with chili powder, cinnamon, and salt. Top with the chipotle chickpeas and sunflower seeds.
