This is a red lentil pasta with mushrooms, red onion, and sun dried tomatoes all in a creamy homemade vodka sauce.
3/4 box of Trader Joe's red lentil pasta
1 cup of sliced mushrooms
5 sundried tomatoes- sliced
half of a red onion- chopped
1 cup of Trader Joe's organic tomato sauce
2 tsp of grapeseed oil
Cream Sauce Ingredients:
1 cup of unsalted cashews
1/2 cup water- more if it's too thick
2 tbsp of fresh lemon juice
1 garlic clove
salt to taste
In a large pot bring water to boil and then add in 3/4 of pasta from the box. In a separate pan add in the grapeseed oil, mushrooms, red onion, and sundried tomatoes. Sautee until the mushrooms are soft and cooked through.
While the pasta and veggies are cooking add all of the cream sauce ingredients to a blender and blend until it is creamy and smooth.
Once the veggies are done cooking add in the tomato sauce and 1/2 cup of cream sauce. Stir until everything is well combined and bring the heat down to low and cover.
Drain the pasta and then add the pasta to the veggies and cream sauce. Then serve!
