Pasta in Vegan Vodka Cream Sauce

This is a red lentil pasta with mushrooms, red onion, and sun dried tomatoes all in a creamy homemade vodka sauce. ⁣


3/4 box of Trader Joe's red lentil pasta⁣

1 cup of sliced mushrooms⁣

5 sundried tomatoes- sliced ⁣

half of a red onion- chopped⁣

1 cup of Trader Joe's organic tomato sauce⁣

2 tsp of grapeseed oil⁣

Cream Sauce Ingredients:⁣

1 cup of unsalted cashews⁣

1/2 cup water- more if it's too thick⁣

2 tbsp of fresh lemon juice⁣

1 garlic clove⁣

salt to taste⁣

In a large pot bring water to boil and then add in 3/4 of pasta from the box. In a separate pan add in the grapeseed oil, mushrooms, red onion, and sundried tomatoes. Sautee until the mushrooms are soft and cooked through. ⁣

While the pasta and veggies are cooking add all of the cream sauce ingredients to a blender and blend until it is creamy and smooth. ⁣

Once the veggies are done cooking add in the tomato sauce and 1/2 cup of cream sauce. Stir until everything is well combined and bring the heat down to low and cover. ⁣

Drain the pasta and then add the pasta to the veggies and cream sauce. Then serve!⁣
