1 container of kale pesto
1 bag of cauliflower gnocchi
2 cups of frozen broccoli
1 cup of frozen peas
1 cup of low sodium vegetable broth
3 tbsp of grapeseed oil
In a ceramic bowl add in the cauliflower gnocchi and microwave for 3 minutes. Set aside the gnocchi. In a sautéing pan add in the vegetable broth and bring to a simmer. Add in the broccoli and peas and cover to steam.
In a medium sized pan add in the grapeseed oil and bring the heat to medium high. Then drop in the gnocchi, but don't put too much gnocchi in the pan you want to be able to turn them over easily. Cook the gnocchi on each side for about one minute and then set aside in a dish.
When the broccoli and peas are steamed (you will know because the broccoli is tender and bright green) then add in the kale pesto and bring the heat down to low. Then add in the gnocchi to the pesto and veggies. Gently stir the gnocchi into the pesto. Then serve!
