Soba Noodle Pad Thai

Ingredients:

  • Firm tofu

  • 2 cups of broccoli

  • 1 red bell pepper

  • 3 batches of soba noodles

  • 1 cup of peas

  • Organicville Sesame Teryaki

  • 2 tbsp of tamari

Chop up the red bell pepper. Bring a large deep pan to medium heat. Add in a 1/2 cup of water and 2 tbsp of tamari. Wait for the water to bubble and then add in all of the vegetables. Cover the pan and let the vegetables steam for about 8 minutes. Then take the top off and cook the vegetables for another 3-4 minutes. While the vegetables are cooking bring a medium pot of water to a boil. Add in the soba noodles and cook for about 4 minutes then drain. 

Drain and cut up the tofu into block pieces. In the same pot that you used for the soba noodles add in the tofu and cover with half of the teryaki sauce. Cook for bout 5 minutes. 

When the vegetable are done cooking and the liquid is absorbed pour in the rest of the teryaki sauce to the vegetables and make sure they're all covered. Add in the noodles and tofu to the vegetables and make sure the sauce covers everything thoroughly. Serve and enjoy!
