Southern Biscuits


'm a Texas girl, and it would seem a little stereotypical that I love biscuits- but I do! These are vegan cheddar biscuits with three different flavors- jalapeno, basil and garlic, and thyme and garlic. I used fresh basil and thyme because the biscuits smell and taste so good with that freshness! 

I found inspiration for these from other vegan bloggers and ultimately combined ingredients from all of them to make these biscuits to my liking.

** The jalapeno biscuits are spicy so be cautious!


Ingredients:

  • 2 1/2 cups biscuit mix

  • 4 tbsp cold vegan butter

  • 1/2 cup vegan cheese

  • 3/4 cup non dairy milk

  • 1 tbsp minced garlic

  • 1/4 jalapeno

  • 2 basil leaves

  • 2 small sprigs of thyme

Set oven to 400 degrees.

Pour the biscuit mix in a bowl and add in the vegan butter (or regular butter if you prefer). Use a large fork to press in the butter to the biscuit mix until the mix becomes crumbly.  


If you are making jalapeno- cut the jalapeno into slices and chop until you have the desired amount.  If you are making basil/garlic- chop two leaves of basil and add in a tbsp of garlic.  If you are making thyme/garlic- slice the thyme leaves into small pieces and add in a tbsp of garlic. 

You can also make all three flavors by adding in the separate ingredients into individual balls of biscuit mix. 

Ball the mix in your hand and flatten it a little bit. Place on a baking sheet with parchment paper. Then use a tsp to push a little indentation into the middle of the biscuit (very shallow). Dollop a tsp of vegan butter onto the top of each biscuit.


Bake the biscuits for 15-20 minutes until they become golden. Serve with vegan butter, iced tea, or just eat them by themselves!
