Stuffed Baked Potatoes

Ingredients: 2 potatoes olive oil 2 heads of broccoli Vegan butter Thyme Garlic Salt Pepper Red chili flakes, if you like it hot

Heat oven to 425°. Wash potatoes, dry them, and then coat them in olive oil. Sprinkle salt, thyme, pepper, and garlic all the way around the outside of the potatoes. Using a fork or knife make slices in the outside of the potato. Put on a baking sheet and bake for 50 to 60 minutes. The outside of the potato will get nice and crispy.  While the potatoes are baking cut off the tops of the broccoli and cook them in olive oil until they're a little bit crispy. Set aside until the potatoes are done. You'll know the potatoes are done when you can put a fork in them and they feel soft. Cut the potatoes in half and use a spoon to shell out the insides. Using a tablespoon of butter mix up the potato and the butter together until it's creamy. Add in salt, pepper, garlic, and thyme to the mash mix. Spoon in your broccoli and mix well into the mash. Spoon the mash mix back into the potato skins and enjoy!
