Sunday Morning Scones


Ingredients:

  • Scone mix (gluten free)

  • Organic maple syrup

  • Earth balance butter

  • Organic strawberries

  • Organic blue berries

  • Almond extract

  • Vanilla extract

  • Almond milk

  • Fresh basil

Set oven to 375 degrees. In a mixing bowl put all of the scone mix and 8 tbsp of butter. Cut in the butter into the mix until the dough is crumbly. 


Pour in the almond milk, 1/4 cup of maple syrup, and any fruit that you desire. I made the dough first and then cut it in half. I then mixed in blueberries and almond extract to the first 1/2 of dough and strawberries and basil to the other 1/2 of the dough. I added a little cinnamon to the blueberry mixture, but it tastes just as great without it!


Then take a large spoon and dollop the scone mix onto a parchment lined cookie sheet. Place in the oven for 20 minutes.


Serve these babies with some vegan butter, organic jam, or even some clotted cream if you have it! We enjoyed these with some strawberry mimosas to round out our Sunday morning.
