I was going through the leftover vegetables that I had and decided to whip up some sweet potatoes, onion, and mushrooms with a taco seasoning. Let me tell you how heavenly it turned out! I spooned this mixture on top of corn tortillas and black refried beans.
1 large Japanese sweet potato
1 cup of sliced organic mushrooms
1/2 cup of chopped yellow onion
3 tbsp of Trader Joe's taco seasoning (comes in a packet not a shaker)
1 tbsp of grapeseed oil
Chop up all of your vegetables and pour into a bowl. Add in the taco seasoning and mix up the vegetables so they are evenly coated. Pour in the tbsp of grapeseed oil to a medium-sized pan and bring the heat to medium. Then pour in the vegetable mixture and cook for about 8-10 minutes or until the onions are getting just a little caramelized. Then spoon into your favorite form of taco and drizzle with some hot sauce. ☺️
