Tofu Scramble With Vegan Hollandaise





Tofu scramble is a staple on the weekends at my house. I try to mix up how I incorporate ingredients into the tofu scramble. This particular recipe has kale, mushrooms, onions, and a delicious vegan hollandaise on the top!⁣

Recipe:⁣

1 container firm tofu⁣

1 cup sliced mushrooms⁣

1 cup frozen chopped kale⁣

1/2 cup of chopped onion⁣

1 tbsp of grapeseed oil⁣

1 tsp of black salt⁣

3 tbsp of nutritional yeast⁣

1 tsp turmeric⁣

1/2 tsp garlic⁣

Hollandaise sauce:⁣

1/2 cup cashews⁣

1/2 cup water⁣

Juice of 1/2 lemon⁣

1/2 tsp salt⁣

1/2 tsp garlic powder⁣

1/3 tsp turmeric⁣

1 tsp Dijon mustard⁣

Chop all of your vegetables. In a pan pour in the grapeseed oil and bring heat to medium. Then add in the veggies (kale, onion, mushroom) and cook until the onions are translucent.⁣

Drain the tofu and drop it into a bowl. Cover the tofu with nutritional yeast, turmeric, black salt, and garlic. Using a fork press down on the tofu until it breaks away in chunks. Then stir it together to combine all of the spices. You want it to look like a chunky scramble because it will break up more in the pan. Once all the spices are mixed in add the tofu to the pan with your veggies. Cook for about 5 minutes or until the tofu starts to brown a little. Now let's make the hollandaise! In a small blender add in all of the ingredients and pulse until smooth and creamy. ⁣

Once your tofu scramble is done cooking pate it and pour the hollandaise on top and enjoy!⁣
