Vegan Barbacoa Quesadillas

We love our Mexican food! I know that many people will make their own barbacoa but I'm all about making dinners quick and not reinventing the wheel! I found a great brand of pre-made barbacoa and I used it to make these quesadillas. 


  • Sweet earth chipotle savory grounds

  • Avocado

  • Coleslaw cabbage mix

  • Heidi ho smokey chia cheeze

  • Pico de gallo

  • Follow your heart vegan ranch

  • Whole wheat tortillas

Pre-heat the oven to 350. Slice the tortillas in half and then spoon in the barbacoa and pico de gallo. Add your desired amount. Fold over the top of the tortillas and place on a parchment lined cookie sheet. Do this until you have as many quesadilla slices as you desire.  Dollop Heidi ho smokey chia cheeze on top of the quesadillas (maybe a half tbsp) and then put them in the oven for 15 minutes. 

On a plate sprinkle the cabbage mix and lightly drizzle the vegan ranch on top. Pull the quesadillas out of the oven and put them on top of the salad mix. Spread the hot cheese that is already on top of the quesadilla. Top each quesadilla with avocado and salt and pepper if you desire!
