Vegan Breakfast Sandwich

Ingredients:

  • Firm tofu

  • Lightlife sausage

  • 1 avocado

  • 2 whole wheat bagel

  • Violife chili cream cheese or Kitehill jalapeno cream cheese

  • 2 tbsp of nutritional yeast

  • 1 tsp of black salt

  • 1 tsp of garlic

  • 1 tsp of cumin

  • 1 tsp of chili powder

  • 2 tbsp olive oil

Remove your desired amount of tofu from the package. I used about half of the block of tofu. Cut into four smaller blocks and drain. Put the tofu in a strainer and cover with paper towels. Then put a heavy bowl on top of the tofu to help drain the rest of the liquid. While the tofu is draining cut a few slices of lightlife sausage and cook it in a pan. Then set aside the cooked sausage. Toast your bagels at this point in time. Slice up the avocado.

In a bowl mix up the nutritional yeast, black salt, garlic, cumin, and chili powder. Take the tofu and coat it in the spices. Then pour the olive oil in a pan and bring the pan to medium heat. After the tofu has been coated in the spices then place it in the olive oil and cook about 3-5 minutes on each side. 

Spread the cream cheese on the bagels, then put the slices of sausage on the bagel, then the tofu, and then top with the avocado. Serve!
