3/4 cup of buffalo sauce (your choice)
1 tbsp of cajun seasoning
1 tsp of garlic powder
1/2 head of cauliflower chopped (or two bags of chopped cauliflower florets)
6 blue corn hard shell tortillas
1 cup of shredded red and green cabbage
Preheat oven to 425 degrees. In a bowl pour in 1/4 cup of buffalo sauce, the cajun seasoning, and the garlic powder. Add in the cauliflower and coat the cauliflower with the sauce. Line a baking sheet with parchment paper and pour the cauliflower on top. Bake for 30 minutes. Flip the cauliflower over at 15 minutes. While the cauliflower is baking, mash up the avocado and break the tortillas in half to make tostadas. Spread the avocado on the bottom and then top with a handful of cabbage mix. Once the cauliflower is finished pull it from the oven and set aside. In a small bowl pour in the rest of the buffalo sauce that you have and warm it in the microwave for about a minute. Pour the cauliflower back into your mixing bowl and pour the hot buffalo sauce on top. coat all of the cauliflower with the remaining sauce. Then spoon out the cauliflower on top of the tostadas and serve!
