Vegan Fried Rice

Yes it's delicious, yes it's comfort food, yes it's perfect for a movie night, and yes it's vegan! This recipe requires some bizarre ingredients, but in the end you will be very happy with the outcome!


  • 2 cups short brown rice

  • 2 cup of peas

  • 2 cups of mushrooms

  • 1 cup of carrots

  • 1/3 cup of green shallots Sauce

  • 3 Tbsp soy sauce

  • 1 Tbsp peanut butter

  • 1 tbsp minced garlic

  • 1-2 tsp chili garlic sauce 

Bring a pot with 5 cups of water to a boil. Add in the 2 cups of short brown rice. Cook until the water is absorbed or the rice is as soft as you like. Drain off any excess water. In a pan place the peas, carrots, mushrooms, and shallots. Cook on medium heat until the vegetables are tender. I cook mine with 1 tbsp of the sauce mixture. Once the rice is cooked to your liking then add the rice to the vegetable mixture. Turn the heat to low and add in the sauce and mix well. You can always add a little more soy sauce when you serve it if you would like to!
