Vegan Migas Scramble

Ingredients:

  • 1 block of extra firm tofu

  • 1 package of lightlife breakfast sausage

  • 1 container of pico de gallo

  • 1 slice of violife cheddar cheese (you can go without this if you don't have it)

  • 4 tbsp of nutritional yeast

  • 3 tbsp of black salt

  • 1 tbsp turmeric

  • 1 tbsp garlic

  • 1 tbsp cajun seasoning

  • 2 tbsp olive oil

Take the tofu out of the container. Put it in a colander and place a paper towel on top. Then take a heavy cutting board and place it on top of the tofu. This will help to drain all of the liquid from the tofu. It takes about 5-10 minutes to drain. In a bowl combine all the spices: nutritional yeast, black salt, garlic, turmeric, and cajun seasoning. Crumble the tofu (but not too much) and throw it in the bowl with all the spices. Mix it well until the tofu is completely covered.

Put a medium sized pan on the stove and bring to medium heat. Add the olive oil. Add in the sausage and crumble it in the pan. Add in the pico de gallo and mix it well. Cook for about 5 minutes. Then add in the tofu and cheese and mix it up with the sausage and pico. Cook for another 5 minutes. Then serve by itself or in corn tortillas with a little cilantro.
