1/3 cup of pumpkin puree 4 packets of cinnamon or maple instant oatmeal (your pick) 1 tbsp pumpkin spice 3 tbsp maple syrup 1/4 cup flour 1/4 cup pumpkin cold brew (you can sub regular almond milk if you don't want to go get the cold brew) 2 tsp vanilla extract 1 cup pecans 1/2 cup pumpkin seeds 2 tbsp of honey
Heat oven to 350. Mix all ingredients except the peans, pumpkin seeds, and honey in a mixing bowl. Once well combined, add the mix to a parchment lined round cake pan. Spread out the mix evenly to make sure you fill the whole pan. Top the mix with the pecans and pumpkin seeds. Drizzle honey across the top.
Bake for 30 minutes. If your pecans start to burn take aluminum foil and cover them. Pull from the oven and let rest for 15 minutes. Then cut up the mixture into bars or slices! I promise this will taste and smell like pumpkin/pecan pie heaven!
