Vegan Pumpkin Spice Latte

Fall is so close to being here! If you are already having glorious mornings that are cooler than this beverage is perfect for you. This is very easy to make and doesn't require a ton of ingredients. The upside is that it doesn't have all that sugar from Starbucks!

Ingredients:

Pumpkin Spice Latte

  • 1/2 cup Califia unsweet almond milk

  • 1 tsp Vanilla extract

  • 1 tbsp Pumpkin

  • 1 tsp Pumpkin spices (if you don't have the mix on hand you can use cinnamon and ground cloves) 

  • 1/2 cup of coffee or 1-2 shots of espresso

  • 1 tbsp maple syrup

Pumpkin Vanilla Foam

  • 1/4 cup Califia vanilla coffee creamer

  • 1 tsp vanilla

  • 1 tsp Pumpkin

Either brew your coffee or pull your espresso shots. In a saucepan combine all of the ingredients for the pumpkin spice latte.  Put the heat on medium and bring the latte to a simmer. Whisk all the ingredients and make sure the pumpkin is well mixed. While the latte is coming to a simmer take the coffee creamer and warm it up (in the microwave or on a stove- you don't want it hot, just warm). Then add in the rest of the ingredients to the warmed coffee creamer. Either use a foaming wand or a whisk to foam up the ingredients. 

Once your latte has come to a simmer remove it from the stove and pour it into a mug or glass and then spoon the foam on top. I like to top my foam with a little cinnamon or you can serve it as is!
