Ingredients: 2 tomatoes 1 can diced tomatoes 1 yellow onion 1 red pepper 1 tbsp minced garlic 5 cups vegetable broth 1 small can of tomato paste 3 large carrots
Chop the yellow onion, red pepper, tomatoes, and carrots. In a large pot add in 1/4 cup of vegetable broth and minced garlic. Add in the carrots and yellow onion and cook on medium heat. You want the liquid to be simmering. Once the onions and carrots are soft add in the tomato paste. Stir the paste and let it dinner with the veggies for about one minute. Then pour in the rest of the broth. Add in the tomatoes and the red peppers and cook for 20 minutes. Again, you want the broth to be simmering the whole time. Stir occasionally. Pour the soup into a blender and mix until the soup is smooth and there aren't any lumps.
