Vegan Shrimp Cesar Salad

  • 5 cups of romaine lettuce

  • 3 cups butter lettuce

  • 2 cups shredded kale

  • 1 can of chickpeas

  • 1 tbsp of olive oil

  • 1 can of hearts of palm

  • 1 bottle of follow your heart cesar salad dressing

  • 2 tbsp red pepper

  • salt and pepper

  • 1/2 cup of whole wheat flour

  • 3 tbsp of cajun seasoning

Heat the oven to 400 degrees. Drain the chickpeas and pour them on a parchment lined cookie sheet. Cover the chickpeas in olive oil, red pepper, and salt and pepper. Place in the oven for 20 minutes. After 20 minutes flip them over and cook for another 20 minutes. 

While the chickpeas are baking drain the hearts of palm. Add the flour and cajun seasoning to a bowl. Then toss the hearts of palm in the flour and seasoning mix. Pour the hearts of palm on a parchment paper lined cookie sheet and put in the oven for 15 minutes. They should be crispy. 

In a bowl shred the kale, butter lettuce, and romaine. Then toss in the chickpeas and hearts of palm. Add as much cesar dressing as you like and mix well.
