1 can hearts of palm
1/2 cup of whole wheat flour
3 tbsp of cajun seasoning
1 container vegetable oil
1 bag of shredded cole slaw
2 spoonfuls of sir kensington's chipotle mayo
4 small corn tortillas
Drain the hearts of palm and chop them up into medium sized pieces. In a medium sized pan pour in vegetable oil to where it would cover half of the hearts of palm pieces. Bring the heat to medium-high. In a mixing bowl pour in whole wheat flour and cajun seasoning and mix it up. Then add in all the hearts of palm into the mixing bowl and spoon over the flour mixture until all of the hearts of palm are covered. Once they are completely covered throw the hearts of palm into the frying pan and cook for about 2-3 minutes and then flip over and cook for another 2-3 minutes.
While the hearts of palm are cooking pour about 2 cups of shredded coleslaw into a mixing bowl and add in two spoonfuls of sir kensington's chipotle mayo. Mix it up with the coleslaw until all of the coleslaw is coated.
Spoon out the fried hearts of palm onto a paper towel. Then spoon some of the hearts of palm into the corn tortilla and top with a spoonful of coleslaw.
