Vegan Sloppy Joe's

Everyone loves a good sloppy joe now and then. I always think of movies with kids at summer camp demanding them! These are light, high in protein, and of course vegan. You can change the recipe to include ground beef if you would rather!


  1. 2 cans of black beans (I used spicy)

  2. 1/4 cup of chopped jalapenos

  3. 1/2 cup of mushrooms

  4. 5 sun dried tomatoes

  5. 1 small white onion

  6. 1 cup of cooked quinoa

  7. 1 tbsp minced garlic

  8. chopped cabbage mix (coleslaw mix)

  9. sesame buns

  10. Smokey Joe sloppy joe sauce

Take  ingredients 1-7 and mix until smooth in a food processor. Heat up a skill to medium-high heat and spoon 1 cup of the mix into it. Cook it until you can make the mix into patties (around 5 minute). Place the patties on parchment paper to cool. The outside should be crispy but the inside will be soft. Do this until all of the mix is made into patties or save some of the filling for my taquito recipe! Heat up 1/2 cup of Smokey Joe sloppy joe sauce in a pan. Place two patties on the sesame buns and pour the Smokey Joe sauce on top until you have the sauce you want. Top the patties with the coleslaw cabbage mix and serve.
