Vegan Stuffed Jalapenos


Ingredients: 6 large jalapenos 2 packages of Kite hill jalapeno cream cheese (or plain if you don't want it spicy) 1 package of lightlife vegan sausage Salt and pepper Parsley


Cut the jalapenos in half and clean out the middle so there are no seeds. Be very careful to wash your hands after handling the jalapenos so you don't burn your eyes or anything else. Set the peppers aside and heat up the grill to 400 degrees. If you do not have a grill heat the oven to 400 degrees.  Heat a medium sized pan and add in the vegan sausage. Cook the vegan sausage for about five minutes and break it apart until it is crumbly. Lower the heat and add in the jalapeno cream cheese. Mix until it is well combine. Remove from heat. Spoon the cream cheese sausage mix into the jalapenos. Place the jalapenos onto a parchment lined cookie sheet.  Bake the peppers for 20 minutes or until the mixture is lightly golden on the top. Remove from the oven and sprinkle parsley on top. Serve with a vegan ranch dressing, I prefer "Follow Your Heart" brand.
