Vegan Taquitos

I really cannot stop this love affair with Mexican food and I truly don't want to! I used my left over sloppy joe filling to make these awesome taquitos. 


  • Whole wheat tortillas- medium

  • Sloppy Joe filling

  • Sir Kensington's chipotle mayo

  • Olive oil

Pre-heat the oven to 400 degrees. Cut the whole wheat tortillas in half. Spoon in 1/4 cup (or a little less depending on tortilla size) onto one side of the tortilla. Roll the tortilla until it makes a little burrito. Place the taquito onto a parchment lined baking sheet. Do this until all the tortillas are filled. Spray olive oil on the taquitos and bake for 13-15 minutes. Microwave one tbsp of sir kensington's chipotle mayo. Once the taquitos are finished drizzle the chipotle mayo on the top and enjoy!
