Veggie Medley with Hummus


Veggie Medley Ingredients 1 head of broccoli 1 cup of frozen peas 1 cup of sliced mushrooms 8 small creamy potatoes 4 tbsp of olive oil (add more if you need to)

In a large skillet add the potatoes and cook until they are getting slightly golden. Then add in all of the veggies and cook until the mushrooms are cooked through (the rest of the veggies will be ready). Set the veggies aside while you make the hummus.

Ingredients for Sun Dried Tomato Hummus 1 can of garbanzo beans 5 Sun dried tomatoes 5-6 tbsp of olive oil 1 tbsp of minced garlic 1 tbsp of rosemary Salt & Pepper

In a food processor combine all ingredients. I like my hummus a little drier, but if you like it more creamy then add in a little more olive oil. 

Dish out the veggie medley into a bowl and spoon the hummus on top. I like to then mix it all up but you can eat it however you like!
