Veggie Tofu Scramble

Ingredients The Tofu Eggs: 1 container of organic extra firm tofu 5 tbsp nutritional yeast 2 tsp of turmeric 1 1/2 tsp of black salt 1 tsp of garlic powder 1 tsp of cumin

The Rest: 1 tube Lightlife veggie sausage 1 cup sliced mushrooms 1 cup shredded brussels sprouts 1 tsp of grapeseed oil

In a pan add in the grapeseed oil and the veggies sausage. Break up the sausage until it is in small crumbles. Then add in the mushrooms and brussels sprouts. Cook for about five minutes. While the veggies and sausage are cooking grab a mixing bowl. Drain the tofu and drop into the bowl. Then sprinkle all of the herbs and spices on top. Using a large fork break apart the tofu. You don't want it too brown down because you want it to resemble eggs. You are going to be putting this in a pan with the veggies so you will break it up a little more once it is in the pan. Once the tofu mixture looks like large chunks of scrambled eggs add it to the pan. Cook until the tofu is starting to brown a little bit and stick to the bottom of the pan. Then you know it's ready to eat! I like to eat mine with sriracha hot sauce on top. #veganeggs #tofuscramble #plantbasedbreakfast
